Vanilla Chocolate Torte

Crust:
1 1/4 cups flour
6 tablespoons margarine
1/2 cup chopped nuts
1 tablespoon brown sugar
Fillings:
1 cup powdered sugar
1 8-ounce carton cream cheese
1 9-ounce carton cool whip
1 package chocolate instant pudding & pie filling mix
1 1/2 cups milk
1 package instant vanilla pudding
1 1/2 cups milk
Chopped nuts

Mix flour, margarine, nuts, and brown sugar together. Press into 8 x 13 pan. Bake at 350 for 15 minutes. Cool.

Mix powdered sugar with cream cheesy, fold in 1 cup of the cool whip. Spread on cooled crust. Mix choc pudding with milk and spread over first filling. MIx vanilla pudding with milk and spread over chocolate filling. Spread remaining cool whip on top and top with chopped nuts. Chill.

Rhubarb Dessert
CRUST:
3/4 c. butter
2T. sugar
1-1/2 c. flour
Mix and put in ungreased 9 x 13” pan. Bake @ 325 for 15 minutes.

FILLING:
2 c. sugar
2 T. butter
6 egg yolks
1 c. milk0
4-5 c. rhubarb cut up
2 T. flour
Mix and cook until thickened. Pour over crust.

MERINGUE:
6 egg whites
1 c. sugar
Beat egg whites until stiff. Slowly add sugar. Spread over filling and bake @ 350 for approximately 25 minutes.

Blue-Barb (Blueberry-Rhubarb Jam or Topping)
1 c. water
5 c. sugar
2 - 3 oz. boxes Raspberry Jello
5 c. rhubarb
1 can Blueberry Pie Filling

Cut up rhubarb and cook in the 1 cup water until barely tender. Add sugar and cook a few minutes longer, stirring constantly. Add pie filling, cook about 5-8 minutes more. Take off stove. Add jello and stir until completely dissolved. Keep in fridge or freezer.
Additional note: You could use fresh blueberries. Boil the mixture for 10 minutes after adding the blueberries. This jam keeps well frozen and is delicious over ice cream, pancakes, etc. according to Jim and Ev. Thanks for sending the recipe. It's yummy!

Apple Crisp (Microwave)

Soooo good, quick, and easy
6 cups peeled, sliced apples
1 t. cinnamon
1 t. lemon juice
1 c. oatmeal
3/4 c. flour
3/4 c. brown sugar
1/2 c. margarine

Place apples in 8" (2 qt.) square microwave safe dish. Sprinkle with cinnamon and lemon juice. combine remaining ingredients; mix till crumbly. Sprinkle over apples. Microwave on High for 12-14 minutes or till apples are tender. Serve with ice cream or whipped cream.
