Hermit Cookies
3 eggs
1/3 teaspoon cloves
1 teaspoon cinnamon
3 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 cups raisins (cooled)
1 cup water (in which raisins were cooked)
1 1/2 cups sugar
1 cup shortening

Cream butter and sugar. Next add 1 unbeaten and beat hard. Add the other two eggs in the same way ( one at a time). Next add the cooked raisins. Add the flour, spices, soda, and baking powder together. Alternate this mixture with the water. Drop form spoon on a buttered cookie sheet. Bake.
This is a large recipe.

Oatmeal Date Filled Cookies
2 cups sugar
1 cup shortening
3 eggs
2 cups flour with tsp. soda
3 cups dry oatmeal
1/2 teaspoon cinnamon
Mix above items. Roll out and cut in small rounds. Bake.

Date Filling
1 package finely chopped dates
1/2 cup sugar
1/2 cup water
Spread between two rounds.

Doughnuts
2 eggs
1 cup sugar
4 tablespoons melted shortening
3 cups flour
1 teaspoon salt
4 teaspoons baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 cup milk

Beat eggs and sugar; Add shortening; Add flour, salt, baking powder, and spices alternately with milk. Fry in deep hot fat (365-375 degrees) until brown. Drain on absorbent paper. Makes 3 dozen doughnuts. (Easy to make a double recipe)

Mexican Wedding Cakes

1 cup butter
6 tablespoons powdered sugar
1 cup nuts
2 cups flour
1 teaspoon vanilla extract

Mix together. Roll in balls and bake at 325 degrees for 15 minutes. . Roll in powder sugar while warm. Makes 30 cookies.

Molasses Cookies
Lynn
1 cup brown sugar
1 cup melted shortening
1 cup molasses
2 eggs (beaten)
3 teasp baking soda
1/2 cup hot water
1 teaspoon ginger
1 teaspoon cinnamon
5 cups flour

Mix and let set in refrigerator two hours. Roll, cut, sprinkle with sugar, and bake.

Monster Cookies

1 1/2 cups peanut butter
1/2 cup butter
1 cup sugar
1 cup brown sugar
3 eggs
2 teaspoons baking soda dissolved in 1 tablespoon hot water
1 teaspoon vanilla extract
1 teaspoon corn syrup
4-4 1/2 cups oatmeal
1/2 pound m & m's
6 ounces chocolate chips

Mix all together and bake at 350. No, there is no flour!

Corn Flake Bars
1/2 package corn flakes
1/2 package rice krispies
3/4 cup peanuts
1/2 cup cream
1 cup sugar
1 cup light corn syrup
1 teaspoon vanilla extract

Mix corn flakes, rice krispies, and peanuts together.
Cook cream, sugar, syrup, and vanilla together until it forms a hard ball in water. Pour over mixture and stir together. Put in buttered pan and cool.

Pecan Pie Bars
2 cups flour
1/2 cup powdered sugar
1 cup butter (cold)
1 14-ounce can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
1 cup chopped pecans
1 7 1/2-ounce bag almond brickle bits

Heat oven to 350. In large bowl combine flour and powdered sugar. Cut in butter until crumbly. Press firmly into 13x9 pan. Bake 15 minutes. Meanwhile in large bowl stir together sweetened condensed milk, egg, and vanilla. Stir in pecans and brickle bits. Spread evenly over hot partially baked crust. Continue baking for 25-30 minutes or until browned. Cool completely. Cover. Refrigerate until firm. Cut into bars, Store refrigerated. 36 bars.

Santa’s Snickers Brand Surprises
2 sticks butter (softened)
1 c. creamy peanut butter
1 c. light brown sugar
1 c. sugar
2 eggs
1 t. vanilla
3 1/2 c. flour
1 t. baking soda
1/2 t. salt
1 pkg. (13 oz.) Snickers Miniature

Combine the butter, peanut butter, and sugars using a mixer on a medium to low speed until light and fluffy.
Slowly add eggs and vanilla until thoroughly combined. Then mix in flour, salt, and baking soda.
Cover and chill dough for –3 hours
Unwrap all the Snickers miniatures
Remove dough from refrigerator. Divide into 1 T pieces and flatten.
Place a Snickers in the center of each piece of dough.
Form the dough into a ball around each Snickers.
Place on a greased cookie sheet and bake at 350º for 14 minutes.
Let cookies cool on baking rack or wax paper. (Holiday Hint: Spruce up Santa’s surprise with powdered sugar and drizzle melted Dove chocolate gifts over the top of each cookie.

Almond Bars
Lynn
Crust:
1 cup butter, room temperature
2 cups flour
1/2 cup powdered sugar

Filling:
8 oz. plus 4 oz. cream cheese (room temp.)
3 eggs
3/4 cup granulated sugar
1 T. pure almond extract
Frosting:
1 and 1/2 cups powdered sugar
1/2 cup butter, softened
1 and 1/2 T. milk
1 t. almond extract
Almonds - 8 oz. (toasted) for top of frosting

Directions: *It's best to line your baking pan with foil so that you can just lift the bars out and cut them with a long sharp knife, makes a cleaner cut bar.
1.     Using an electric mixer, put softened butter, flour and powdered sugar in med. bowl an mix until fluffy (will look crumbly, but won't stick together much)   Dump the mixture into the 9 x 13 pan and pat   lightly into pan, bake at 350 for 20 min. (very light color).   Set on cooling rack while preparing filling.
2.    For filling, beat together cream cheese (room temp) and sugar.   Once this is smooth, beat the eggs in and add almond extract.   Pour over crust while still hot.   Bake 18 min. at 350 degrees. (done when no dent remains when touched lightly)
3.    Cool the bars on a cooling rack and whisk or beat together frosting ingredients.   Spread on cooled bars and sprinkle with toasted almonds.

Yield:   9 X 13" baking pan

Special K Bars
1 cup sugar
1 cup corn syrup
1/2 cup peanut butter
6 cups Special K© or Rice Krispies©
1 package chocolate chips (11-12 oz. bag)
1 package butterscotch chips (11-12 oz. bag)

Cook sugar and syrup until clear. Don't boil. Add peanut butter. Stir until dissolved. Pour over cereal. Press into a 9 x 13" pan. Combine chips and melt and spread over cereal in pan.

Whole Wheat Bars

1 cup butter
2 cups brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon salt
3/4 teaspoon baking powder
3/4 teaspoon baking soda
2 1/4 cups whole wheat flour 
2 1/2 cups oatmeal
1 10-ounce bag semi-sweet chocolate chips
1 cup nuts (optional)

Combine all ingredients and spread out in a 11x13 pan. Dough will be very thick/crumb-like. Bake at 350 for 25+ minutes.
