Oven Baked Pancake
Lynn's version of a Pannekoeken
3 eggs
1/2 teaspoon salt
1/2 cup flour
1/2 cup milk
2 tablespoons butter
1 1/2 cups cheese if wanted
2 cups sliced fruit

Heat oven to 450. Put 1 T of butter in pan and in oven to melt. Beat eggs, salt, flour, milk, 1 T butter, and cheese and pour into pan. Bake 15 minutes at 450. Reduce to 350 and bake 5 minutes. Serve immediately. Serve with cut up fruits, cooked apples, thawed frozen strawberries, rhubarb sauce, etc. Top with whipped topping. Maple syrup, too, if you want.

Lemon Poppy seed Pancakes
Pancakes:
1 c. flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 8-ounce container lemon low fat yogurt
3/4 cup skim milk
1/4 cup egg beaters or 1 egg

1 tablespoon poppy seeds

Raspberry Sauce:
1/4 cup orange juice
2 tablespoons honey

2 teaspoons cornstarch
1 cup fresh or frozen raspberries thawed

For pancakes, in a medium mixing bowl, stir together flour, sugar, baking powder, soda, and salt. In another mixing bowl, combine yogurt, milk, egg, and poppy seed; add to the flour mixture all at once. Stir the mixture just till combined but slightly lumpy.

For each pancake, pour about 1/4 cup batter onto hot, lightly greased or nonstick griddle or heavy skillet. Cook until pancakes have bubbly surfaces and slightly dry edges. Serve with Raspberry Sauce.

For Raspberry Sauce, stir together orange juice, honey, and cornstarch in a small saucepan. Add raspberries and cook until thickened.

Mixed Vegetable Quiche

9 in unbaked pie crust at room temperature
½ c. shredded cheddar cheese
1 cup cooked mixed vegetables drained
6 eggs
1 ½ cups half and half
2 tablespoons instant dried minced onion
½ teaspoon oregano
½ teaspoon salt

Sprinkle pie shell with cheese, then vegetables. Beat eggs, half and half, onion, oregano and salt together until blended. Pour over cheese and vegetables. Bake in preheated 375º oven for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving. Makes 6 servings.

Egg Bake
Lynn
Remove crusts from 6 slices of bread
Butter bread and put buttered side down
Cover bread with 3 c. diced ham (or cooked sausage, bacon, or chicken)
Sprinkle about 1-2 c. shredded cheese over bread
Dice 6 slices bread and put over cheese
Beat 5 eggs; add 2 1/2 c. milk, salt & pepper & pour over bread, ham, cheese
Drizzle 1/3 c. melted butter over all
Sprinkle with paprika
Cover and refrigerate overnight
Bake 1 hour at 350º uncovered

Jimmy Dean Brunch Casserole
Lynn
1 pkg sausage, cooked, drained, crumbled
4 cups day old bread, cubed
2 cups cheddar cheese, shredded
10 eggs, slightly beaten
4 cups milk
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon onion powder
pepper
1/4 cup mushrooms (optional)
1/2 cup tomato, peeled and chopped (optional)

Place bread in well buttered 9x13" baking dish. Sprinkle with cheese. Combine next 6 ingredients. Pour evenly over the bread and cheese. Sprinkle sausage and optional ingredients over the top. Cover and chill overnight. Preheat oven to 325º. Bake uncovered for about one hour. Tent with foil if top begins to brown too quickly. Serves 6.

Becky's Ala Brunch
2 c. chopped onion
2 c. chopped green pepper
1/2 stick margarine
1 T flour
1-14 oz. can stewed tomatoes
1-20 oz. can rotel tomatoes with green chile's
1 lb. cubed American cheese
1 c. cubed ham or chicken
12 hard boiled eggs, cut up
English muffins, small bagels, potato rolls

Saute onions and peppers in margarine, stir in flour. Add tomatoes and rotel tomatoes and cook for 10 minutes. Add cheese, your choice of meat and cut up eggs. Heat until cheese melts. Serve over toasted English muffin halves. Sprinkle with crumbled bacon or bacon bits.
